This is a moist, soft cake with fruit flavored and a crowd pleaser for any occasion. I made this one with my friend in a cast iron oven which gave it a more deeper flavor but you can use oven, it will still taste delicious.
Ingredients -
Pineapple Slices - 4 round slices
Cheries - 6 - 10 (I used 5 for decorations and 3 for the cake batter)
Sugar - 1/4 Cup
Flour - 2 Cups
Baking Soda - 1/2 tsp
Baking Powder - 1 tsp
Eggs - 2
Butter - 1/4 Cup
Milk - 1/4 Cup
Vanila Extract - 1 tsp
Almond Extract - 1 tsp (Optional)
Recipe -
Grease your baking pan well and do not add any parchment paper. In the pan sprinkle sugar to create a caramel effect on the cake top. Place your pineapple slices and cherries to create your design. The trick here is to go slow and neat as this will decide how your cake looks at the end.
Now let's make the cake batter. In a big bowl, crack the egg and add the remaining sugar and cream it well. Add in the butter, vanilla extract, almond extract and milk and mix well.
I did add some more chopped cherries and some cherry juice to give it a more cherry flavor but you can totally omit this step.
Swift in the flour, baking soda and baking powder and mix until just combined.Pour the cake batter over the fruits without moving the fruits around much.
Bake the cake in 350 degree Fahrenheit or 180 degree Celsius or until a toothpick comes out clear from the center of the cake.
Let the cake cook completely before flipping it or else the cake will break apart. I like this cake on its own but you can combine it with some ice cream or some cooled whipped cream.
