Banana Bread - A twist to the traditional recipe

Updated: Jul 4, 2021

A banana bread is different than a Banana Cake, it has a different texture than a cake. It can be intimidating to make one but this is a relatively easier recipe for a Banana Bread. Also, it is a good way to finish up ripened bananas at home :P

Ingredients -

2 cups of wheat/all purpose flour (you can also use 50% wheat and 50% all purpose flour)

4 bananas

2 eggs

1 cup milk

1/2 cup butter/ any flavorless oil

2 tsp Baking Soda

Sugar ( if needed as per your taste)

1 cup rolled oats

Recipe -

In a large bowl mash your4 bananas and and add eggs and milk and butter and mix well. Add in your oats in this liquid mix.

Keep this liquid mix for at least 30 minutes for the oats to soak up the flavor. If you ever made a cutlet or a meat ball and have added bread crumps in the mixture, the oats do the same thing in this recipe. They soak up all the moisture and makes ur banana bread soft and fluffy.

After 30 minutes add in your flour and baking soda and mix till well combined and no lumps is there. DO NOT OVER MIX THE BATTER.

Give your mix a taste and if you need more sugar feel free to add in couple of tea spoons of sugar as per your taste.

Now, line in the pan u want to bake your banana bread and top the cake with more oats sprinkled and some banana coins. I sprinkled some sugar over the banana coins to give a Caramel effect for the banana coins.

Bake your cake at 350 degree Fahrenheit or 180 degree Celsius or till a tooth pick comes out clean in the center of cake. Alternatively, you can also use a cooker or a hot pan to bake the cake.

Timing may vary a bit but keep a close eye after 30 mins of baking.

Once the Banana Bread is baked let it cool down completely before slicing a big slice to enjoy.
