If you do not enjoy plain boiled / raw spinach but you do want to include more greens in your diet then, this is a ideal recipe for you.
Ingredients -
Lentils of any kind - 1 Cup ( I used green whole lentils here)
Tomato - 1
Water - As needed to cook the dal
Spinach - 3 Cups
Turmeric - 1/2 tsp
Chilly Powder - 1 tsp
Oil / Ghee - 1 tbsp
Cumin Seeds (Jeera / Jeeragam) - 1 tsp
Salt - As per taste
Recipe -
Cook your lentils (dal) and tomato in a pressure cooker until done. Normally all lentils takes about 1 - 2 whistles. You can also cook the lentils in a sauce pan by boiling the water and adding the lentils and tomato.
Once the lentils are cooked, add the spinach and let it whiter down. It can seem a lot at first but as it heats up, it will reduce a lot in volume.
For the tampering (tadka), add oil / ghee in a small pan. Once its hot add the cumin seeds and let is sputter. Then add in the turmeric and chilly powder and cook it for about a minute or until cooked through.
Add the tampering (tadka) to your dal and serve hot with rice or chapati. You can even enjoy it as a cup of warm soup on its own.
