Ingredients -
4 Bananas
1 & 1/2 cup all purpose flour or whole wheat flour
1/4 tsp Baking soda
1/2 tsp Baking Powder
1/2 cup Butter
1/2 cup Curd
1/2 cup Milk
1/4 cup sugar (optional for cake mix if Banana is too ripe and sweet enough)
1 tsp Vanilla Essence (Optional)

This upside down cake is a one tray method where you make your caramel sauce also while baking. First you dust sugar on the tray bottom. You need not grease the tray with butter for this. Make a thin layer of sugar on the tray and lay your banana coins on the sugar. You can make any pattern you want here. I used banana coins and arranged in a line. You can even make thin strips of banana and make your own pattern in this.
Once your tray is ready, make your cake batter to pour over the fruit. Mash 2 bananas in a bowl with a fork and make a banana paste. Mix the wet ingredients ( Butter curd and milk) in this mixture and combine well. Instead of egg we are using curd and banana for this recipe. Once your wet mix is ready add in your flour and baking soda and baking powder and fold in the mix. You can add sugar as per your sweet tooth preference.
Pour your cake batter over the banana coins and flatten the top. Do not mix in the tray or disturb your pattern. Once, the cake batter is in the baking tray, bake your cake at 350 degree Fahrenheit or 180 degree Celsius for 35 to 45 minutes. Check with a tooth pick to check if the cake is done.
Cool your cake completely before flipping over to your serving plate. If your banana coins or strips fall apart, you can always put it back and no one would know the difference.
You can use any fruit to make this type of cakes. Peaches, apple, pears, oranges work really well too.
