Ingredients -
1 & 1/2 cup All Purpose Flour ( you can use oats or wheat flour if you prefer)
1/2 cup sugar ( add or reduce your sugar as per taste)
1/4 cup oil ( any flavorless oil)
3/4 cup milk
1 egg
1 tsp baking soda
2 tsp baking powder
1 pinch of salt
2 tbsp Vanilla essence
1 tsp lemon juice
1/2 cup berries of your choice. I used strawberry, blueberry and raspberry but any berries will work too. Even cherries is a good choice if you do not want berries.
Recipe -
Add your berries and lemon juice in a small bowl and mix and keep aside. You can chop the berries in what ever size you want in your cake. I prefer keeping it bite size pieces. Let the berries soak up all the lemon juice while you make your cake mix.
In a bigger mixing bowl, add your oil, milk, sugar and mix well.Add your egg and beat till it becomes a bit fluffy. Now add in your vanilla essence and stir in well.
Add couple of table spoons of flour in your berry mix making sure it is well coated with flour. Do not omit this step as it will help it not sinking at the bottom of cake while baking.
Add in your rest of the flour and mix in your salt, baking soda and baking soda and mix well and fold it gently in your wet mix. Fold everything in and add in your coated berries and mix gently. Do not mix a lot after you add in your berries.
Put your cake batter in a lined baking tin and bake it at 350 degree Fahrenheit or 180 degree Celsius or until a tooth pick inserted at the center comes out clean and let the cake cool a bit before you cut into it.
Your very berry vanilla cake is ready to be served.
