Ingredients
For Chicken Curry
Chicken - 1 kg
Whole dried red chillies - 6 (adjust as per heat preferences)
Coriander powder - 2 tsp
Turmeric Powder - 1 tsp
Onions - 3 medium sized
Oil - 2 tbsp ( I used coconut oil but any mild flavored oil will work)
Cardamon Pods - 5
Cinnamon Stick - 1 stick
Cloves - 5
Pepper Pods - 4 (you can substitute with 1 tsp of pepper too)
Salt - As per taste
For Rice
Rice - 2 Cups
Water - 4 - 5 Cups
Salt - 1 tsp (Optional)
Recipe
For Rice-
In a saucepan, add water and bring it to a boil and season the water with salt. You can skip the seasoning if you want. Once water has boiled add the rice and cook until done. Drain the excess water and keep aside.
For Chicken Roast-
First soak the whole red chillies in warm water for at least 10 minutes. Grind cardamon pods, cloves, pepper and cinnamon stick to a fine powder. This is the base spice mix of our curry. In the same mixer/grinder add in the soaked chillies, turmeric powder and the coriander powder and make a smooth paste. Use enough water to make a fine paste of the spices and the chillies.
In a saucepan, start by adding oil followed by the onions. Cook the onions till they are golden brown and then add the chilly paste and cook for 3 to 4 minutes or until the spices and the chillies are cooked through.
Now add the masala we made from the whole spices and mix for about a minute and then add the washed chicken pieces. I personally prefer smaller pieces but you can cut the chicken as you desire.
Coat the chicken pieces with the masala and cook well until the chicken is cooked through. It can take anywhere between 15 to 30 minutes. One way of checking if chicken is cooked is by cutting in a piece and checking if its completely white. If it's pink then it needs more time to cook.
Normally chicken roast are with less gravy but if you want more gravy, add water and adjust the consistency. Your chicken roast curry is ready. I served mine with plain rice but this goes really well with appam, porotta, chapati, naan or any type of bread too. Enjoy your easy chicken roast.
