This is an easy sambar recipe which my mom used to make all the time. This is not the traditional sambar recipe and this is my improvised version of sambar. Try this at home, I promise you won't be disappointed.

Ingredients

Split Chickpea /Toor Dal / Sambar Paripu - 1 Cup

Potato - 2 medium sized

Onion - 1 medium sized

Tomato - 2 small sized

Beans - 6 / 7 pieces

Carrot - 1 small size

Chilly - 3

Curry Leaves - 8 - 10

Chilly Powder - 4 tsp

Coriander Powder - 3 tsp

Turmeric Powder - 1 tsp

Hing / Asafoetida - 1/2 tsp

Tamarind Paste - 2 tsp

Salt - As per Taste

Oil - 1 tbsp

Mustard Seeds - 1 tsp

Dried Chilly - 2

Recipe -

In a pressure cooker add your lentils, salt, turmeric and vegetables with enough water to cook the lentils. Let it cook for one whistle and then keep it aside. You can even boil the lentils with the vegetables until done, if you don't want to use a pressure cooker.

This is the vegetable combinations I prefer, but you can add what ever vegetables you want in this recipe.

Once the lentils and vegetables are cooked, lets make the tempering. In a small sauce pan, add the oil and add the mustard seeds. Once, it starts to splutter, add the dried green chillies with chilly powder, coriander powder and hing / asafoetida.

Now add this tempering to the cooked lentils and mix well. Add in the tamarind paste and season with salt and serve hot. Instead of tamarind paste, you can also use raw tamarind soaked in water.

I used some coriander leaves for garnishing but, you can completely skip this. Enjoy your hot sambar with some idly / dosa / rice etc.
