Paneer Burji - A Vegetarian version of Scrambled Eggs



This is an easy vegetarian dish which can be enjoyed on it's own or as a side dish to any type of flat bread or rice.


Ingredients

Paneer - 200 grams (2 block)

Oil - 2 tbsp

Mustard Seeds - 1 tsp

Cumin / Jeera Seeds - 1 tsp

Turmeric Powder - 1/2 tsp

Chilly Powder - 1 tsp

Garam Masala - 1 tsp

Spinach - 2 Cup chopped

Onion - 1/4th Cup Diced

Salt - As per taste

Pepper - As per taste


Recipe-

In a hot pan, add oil and then the Cumin and mustard seeds and let them splutter. Add the diced onion and cook until it's soften. Now add the turmeric powder, chilly powder and garam masala powder and stir well.

Add the crushed paneer and mix until well combined and then add in the spinach and cook well until the spinach is well reduced. Season with salt and pepper and garnish with coriander if you prefer. Your easy paneer burji is ready.

You can use ready made paneer or you can make your own by boiling full fat milk and adding a table spoon of lemon / vinegar or any form of acid and wait till the fat in milk curdles. Then strain the curd from the whey using a cloth or a strainer. Your freshly made paneer is ready.
