Healthy and Tasty Broccoli Soup


Ingredients -

Broccoli - 2 cups

Milk - 3 tbsp

Flour - 1 tsp

Butter / Oil - 1 tsp

Salt - as per taste

pepper - as per taste


Recipe -

This is a warm comforting soup perfect for winter days. Boil broccoli with stems in water and salt until its cooked. I do reserve some small pieces of broccoli before I boil the rest and blend it with the water I boiled it in.

Strain the broccoli to get a smooth texture of soup. Transfer the broth in a saucepan and adjust consistency of the soup to your liking.

In another pan add your butter and the small broccoli pieces and fry it and add it to the strained broccoli soup. In the same pan, roast the flour to get rid of the raw taste and add the milk and mix well to make a thickening paste and add this to the soup.

Adding flour with milk is a healthier alternative for the cornflour to thicken the soup. Adjust the seasoning with salt and pepper and serve it hot. Enjoy your healthy and tasty broccoli soup.
