If you are looking for an easy and comforting veg meal then this is the recipe for you. This is perfect with left over rice and for those busy week nights. One small trick is to chop all your veggies and keeping it ready before you start cooking and cook your fired rice always on medium to high heat. This way it becomes more crispy and crunchy.
Ingredients -
Mushroom - 1 Cup sliced
Onion - 1/2 Cup Diced
Oil - 2 tbsp
Garlic - 3 tbsp Minced
Chilly - 2 whole chilly diced (add as per your heat tolerance)
Coriander - Handful of chopped (Optional)
Rice - Cooked 2 Cups
Soy Sauce - 3 tbsp
Vinegar - 2 tbsp
Salt - As per taste
Pepper - As per Taste
Recipe -
In a pot, add some oil and add mushrooms and cook till it softens up. Add your minced garlic and onion and mix well and let it cook for 2 to 3 minutes or until all veggies are soften.
Add few of your coriander and let it mix well. Once your veggies are soften, add your cooked rice over the vegetables.
Now add your soya sauce and vinegar over the rice. Try not to add the sauces directly over the vegetables as it will destroy the color of the vegetables. Mix everything well and adjust your salt and pepper as per your taste.
Your mushroom fried rice is ready. Serve hot and enjoy.
